Up in Smoke at Honey Eatery & Social Club

For our first Secret Burger event, we thought what would be more exciting than a bbq… but let’s do it in style! We will be wheeling in a giant 3 chamber smoker in front of the building for a display of 3 completely different flavor profiles using smoke. One price, three super unique dishes and one hell of a party!
Starting things off will be Smoked Watermelon, rich apple and hickory smoke paired with its natural sweetness. We will be pickling some of the rind and marinating feta on Arugula and finishing it with a Champagne Vinaigrette
The show-stopper will be a slow smoked heritage pig after a deep brine in lemongrass, soy, ginger and garlic. Then served with kimchi, pickled ramps and Ajisuke Tamago (Marinated 6 minute egg) on fresh steamed brown rice.
Last but not least, comes dessert. We really wanted to have some fun with this one. We are going to make a smoked chocolate and bone marrow Gateaux (traditional French cream and fruit layered cake) with Salted Honey Caramel, Milk Foam, Cherry White Chocolate Crémeux, Graham Cracker Tuille and Nuggets of Smoked Bone Marrow stuffed in cherries.
Since this is a coursed dinner, it will start promptly at 6pm. We also will have paired cocktails and beers available ala carte for each course.
